Today, we're sharing a simple and tasty recipe for homemade granola bars you can enjoy on the go.
Here's what you'll need:
- 3 cups rolled oats
- 1 cup chopped nuts (almonds, walnuts, and pecans work great)
- 1/2 cup honey
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup dried fruit (we love raisins, cranberries, and chopped apricots)
Instructions:
Preheat your oven to 350°F (175°C). In a large mixing bowl, combine all but the dried fruit. Mix well until everything is evenly coated, then fold in the dried fruit. Press the mixture into a 9”x13” baking dish lined with parchment paper. Bake for 20 to 25 minutes or until the edges are golden brown. Let the granola bars cool completely in the pan before cutting them into squares.
